Bakers Ammonia is a pure powdered ammonium carbonate.
This is called for in some old recipes and also some new ones.
It is also called "hartshorn" and leaves no unpleasant alkaline 
off-flavor in your baked goods. Store in container with tight 
cover in cool dry place.
