Macadamia Nut Cookies
Ingredients:
1 1/4 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, softened
3/4 cup granulated sugar
3/4 cup brown sugar
2 eggs
1 teaspoon vanilla extract
12-ounces of white chocolate chips
3 cups uncooked quick oats
1 cup chopped macadamia nuts or macadamia nut pieces
Directions:
Preheat the oven to 350 degrees. Combine the flour, baking soda, and salt. In a separate bowl, cream the butter with the brown sugar and granulated sugar.
Add eggs and vanilla to the creamed mixture. Stir in
the dry ingredients until well mixed. Add the white chocolate chips, oats, and nuts. Allow the dough to
rest 20 minutes. Drop the dough, 1 teaspoon at a
time, onto an un-greased cookie sheet. Bake for
about 10 minutes, watching carefully to avoid over baking the cookies. The cookies should be light brown
in color. Makes about 3 dozen.
